My experience with smoking meat has been entirely outdoors, using a hybrid grill that burns charcoal, wood, or pellets. Not everyone has the space for these setups, but with the latest equipment from GE Appliances, you can bring your grill indoors. Plus, you don’t even have to be there while it’s cooking. At the company’s CES 2024 booth in Las Vegas, I finally got a taste of what cooking can do with the GE Profile smart indoor smoker.
Louisville chef and Food Network Chopped winner Dallas McGarity will be at CES this week with GE Appliances. He explains that he’s been using smart indoor smokers in his restaurants to infuse flavor into everything from spices to cheese and deviled eggs. Of course, when most people think of smoked foods, they think of meat. McGarity prepared a bite-sized taster to show off the types of flavors we can expect from the device: beef tenderloin with sweet chili sauce, roasted garlic barbecue sauce, Southwest breadcrumbs and scallions. Sure, it’s a tastemaker, but not too far off from what you’d prepare at home.
After a few hours in the smart indoor smoker, the beef had a distinct wood pellet flavor. McGarity also prepared a pork butt, but it was still several hours away from being ready. Based on my experience with outdoor smokers, I can feel the capabilities of the GE Profile models even with just one bite. My main concern was how much smoke it would put out, and it’s nice to see that the device was able to pump in enough smoke for a limited time. This bodes well for 8 to 12 hours of slow, slow smoking.
Another aspect of smart indoor smokers that I’ve seen in action is the smoke clearing feature. Or, I should say, I gotta see what happens when you don’t use it. McGarity was keeping beef warm in the unit and instead of asking me to wait 10 minutes for the cooking chamber to vent smoke, he turned the unit on and smoke was wafting through the air. Ideally you don’t want to do this in the kitchen, but it works quickly and with very little cloud. Even so, the smart indoor smoker recovers quickly, returning to target temperature within seconds and producing visible smoke.
The cookware costs $1,000, and unlike many other products launched at CES, it’s already available at some retailers.
